Q&A with Catering Student Grainne Kerr....

 

Grainne Kerr is a young professional Chef from the City of Derry/Londonderry and recently completed her Level 3 Professional Cookery Qualification with Belfast Central Training. Grainne received her certificates just days before heading off on her travels to New Zealand were she plans to work and develop her already high level of skill and knowledge.

 

  1. What qualification did you achieve with Belfast Central Training?

    Level 3 in Professional Cookery.

     

  2. What or who inspired you to become a Chef?

    My dad inspired me to become a Chef. He's a great cook himself and I grew up eating beautiful homemade meals every day!

     

  3. What is your favourite Food?

    My favourite type of food is anything to do with pastry and desserts! My favourite ingredient is probably chocolate its rich elegant and beautiful to work with. 

     

  4. What Modern trends Culture or Country has influenced your culinary creations?

    I would say Instagram and social media sites are the most influential thing that have helped with my creations recently. It’s so easy to see the trends that are happening all over the world now without much research. However as a pastry chef I still the love the classic French creations and they’re still the masters of the pastry world in my eyes!

     

  5. What has been your biggest achievement to date?

    I’m not quite sure what my biggest achievement to date is at the moment. I always feel a sense of achievement however when I start a new job, I always try and get into a better restaurant every time to try and challenge myself! 

     

  6. What has been most challenging about your time as a Chef?

    The most challenging time as a chef so far is probably the job I'm in at the minute. Its hard work and I'm very much out of my comfort zone as I'm not doing pastry. I'm also in New Zealand and it’s my first job in a different Country away from home. I know I'm learning though which is why I’ll stick it out. 

     

  7. What section of the kitchen do you prefer the most?

    I prefer pastry the most and is what I want to specialise in although I also what to have a good knowledge of all the sections which is why I took my latest job! I do miss pastry however! 

 

  1. What is your professional plans for the future?

At the moment I don't have any set plans for the future apart from travel and learn everything that I can. My boyfriend is also a very talented Chef who is on the same page as myself with regards traveling and learning so maybe someday we might open our own place together when the time is right!
